  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves, chopped
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep the vegetables by chopping them into bite-sized pieces.
  2. Cook the penne pasta in salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  3. In a large skillet over medium heat, add olive oil and minced garlic; sauté until fragrant.
  4. Add the chopped vegetables to the skillet and sauté until they are tender but still crisp.
  5. Combine the cooked pasta with the sautéed vegetables in the skillet. Stir in lemon juice and reserved pasta water as needed for desired consistency.
  6. Sprinkle with grated Parmesan cheese and toss to combine. Serve hot garnished with fresh basil.
