  • 4 slices rustic bread (sourdough recommended)
  • 4 oz sharp cheddar cheese, sliced
  • 2 tbsp unsalted butter
  • 1 can (28 oz) high-quality canned tomatoes (San Marzano preferred)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth (or chicken broth)
  • 1 tsp dried oregano
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Finely chop the onion and mince the garlic.
  2. In a large pot over medium heat, melt 1 tablespoon of butter. Add onions and sauté until translucent, about 5 minutes. Stir in garlic until fragrant.
  3. Add canned tomatoes with juices and vegetable broth. Stir well and bring to a simmer for about 20 minutes.
  4. Blend the soup until smooth using an immersion blender; adjust texture as desired.
  5. Stir in oregano, sugar, salt, and pepper. Keep warm on low heat while preparing sandwiches.
  6. On medium heat, spread butter on one side of each slice of bread. Place one slice butter-side down in a skillet, layer with cheddar cheese, top with another slice of bread butter-side up.
