  • 3 lbs boneless beef short ribs
  • 1 large onion, diced
  • 45 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 tbsp tomato paste
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp sugar
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the boneless beef short ribs generously with salt and pepper. Heat olive oil in a heavy-bottomed pot over medium-high heat and sear the ribs until browned, about 3-4 minutes per side. Remove from the pot.
  2. In the same pot, sauté diced onions and minced garlic until softened, about 5 minutes.
  3. Stir in tomato paste, then add red wine and beef broth; scrape any brown bits from the bottom of the pot. Let simmer for 2-3 minutes.
  4. Return seared ribs to the pot along with thyme and rosemary; ensure they are submerged in the sauce. Cover and reduce heat to low, simmering for about 2-3 hours until fork-tender.
  5. Serve alongside mashed potatoes or roasted vegetables.
