- 4–5 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup dry red wine
- 2 tbsp tomato paste
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- 1 tsp sugar
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season the boneless beef short ribs generously with salt and pepper. Heat olive oil in a heavy-bottomed pot over medium-high heat and sear the ribs until browned, about 3-4 minutes per side. Remove from the pot.
- In the same pot, sauté diced onions and minced garlic until softened, about 5 minutes.
- Stir in tomato paste, then add red wine and beef broth; scrape any brown bits from the bottom of the pot. Let simmer for 2-3 minutes.
- Return seared ribs to the pot along with thyme and rosemary; ensure they are submerged in the sauce. Cover and reduce heat to low, simmering for about 2-3 hours until fork-tender.
- Serve alongside mashed potatoes or roasted vegetables.
