  • 1 lb flank or sirloin steak
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp olive oil (divided)
  • 1 tsp cumin

Instructions

  1. Prepare the marinade by whisking together soy sauce, olive oil, minced garlic, and cumin in a bowl.
  2. Slice the steak against the grain into thin strips and place them in a zip-top bag with the marinade. Refrigerate for at least 30 minutes.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sauté the sliced bell peppers and onions until tender (5-7 minutes). Remove from skillet and set aside.
  4. In the same skillet over high heat, add marinated steak strips in a single layer. Cook for about 3-4 minutes until browned on both sides.
  5. Return veggies to the skillet and toss everything together for another minute until heated through.
