- 1 cup bell peppers (mixed colors), chopped
- 2 cups low-sodium beef broth
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Gather and prepare all ingredients by chopping onions and bell peppers.
- Heat olive oil in a large skillet over medium-high heat. Sear seasoned flank steak for about 4-5 minutes on each side until browned.
- Remove steak from the pan and add onions and bell peppers. Sauté until onions become translucent (about 3-4 minutes).
- Stir in diced potatoes and minced garlic; cook for another 5-7 minutes.
- Pour in beef broth along with cumin and paprika; bring to a simmer. Cover and cook for about 20 minutes until potatoes are tender.
- Return the seared steak to the skillet during the last few minutes of cooking to absorb flavors.
