  • 4 medium Yukon Gold or Russet potatoes, diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers (mixed colors), chopped
  • 2 cups low-sodium beef broth
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Gather and prepare all ingredients by chopping onions and bell peppers.
  2. Heat olive oil in a large skillet over medium-high heat. Sear seasoned flank steak for about 4-5 minutes on each side until browned.
  3. Remove steak from the pan and add onions and bell peppers. Sauté until onions become translucent (about 3-4 minutes).
  4. Stir in diced potatoes and minced garlic; cook for another 5-7 minutes.
  5. Pour in beef broth along with cumin and paprika; bring to a simmer. Cover and cook for about 20 minutes until potatoes are tender.
  6. Return the seared steak to the skillet during the last few minutes of cooking to absorb flavors.
