- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese

Instructions
- Rinse wild rice under cold water. Combine with vegetable broth in a pot over medium heat. Bring to a boil, reduce heat, and simmer covered for about 45 minutes until tender.
- In a large skillet, heat olive oil over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add sliced mushrooms and cook until soft (about another 5 minutes). Stir in minced garlic during the last minute.
- In a bowl, combine cooked wild rice, sautéed veggies, wilted spinach, and sour cream. Mix gently.
- Fold in shredded cheeses and chopped nuts; season with salt and pepper.
