  • 4 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 2 cups sliced mushrooms (button or cremini)
  • 3 cloves garlic, minced
  • 2 cups fresh spinach (wilted)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup chopped toasted pecans or walnuts
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice under cold water. Combine with vegetable broth in a pot over medium heat. Bring to a boil, reduce heat, and simmer covered for about 45 minutes until tender.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add sliced mushrooms and cook until soft (about another 5 minutes). Stir in minced garlic during the last minute.
  3. In a bowl, combine cooked wild rice, sautéed veggies, wilted spinach, and sour cream. Mix gently.
  4. Fold in shredded cheeses and chopped nuts; season with salt and pepper.
  5. Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish and top with additional cheese if desired. Bake uncovered for 25-30 minutes until bubbly and golden brown.
