  • 1 cup bell peppers (mixed colors), diced
  • 1 cup zucchini, sliced thinly
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 avocado, mashed
  • Salsa or hot sauce, for serving

Instructions

  1. Prepare your veggies: Wash and chop bell peppers, zucchini, and red onion.
  2. Sauté until tender: In a large skillet over medium heat, heat olive oil. Add onions and cook until translucent. Then add bell peppers and zucchini; sauté until tender.
  3. Flavor boost: Sprinkle cumin and chili powder over the vegetables; stir to coat evenly and let spices bloom for about two minutes.
  4. Warm tortillas: Wrap corn tortillas in foil and place them in a warm oven at 200°F for about 10 minutes.
