Ingredients

  • 4 medium russet potatoes
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash and prick potatoes with a fork.
  2. Bake potatoes directly on the oven rack for 45-60 minutes until tender.
  3. Cool slightly, cut in half lengthwise, and scoop out the insides into a mixing bowl.
  4. Mash potato insides with butter, heavy cream, sour cream, salt, pepper, and half the cheddar until smooth.
  5. Spoon mixture back into potato skins and top with remaining cheddar and chives.
  6. Bake again for 15-20 minutes until golden brown.
