- 1/4 cup sour cream
- 1 cup shredded sharp cheddar cheese

Instructions
- Preheat oven to 400°F (200°C). Wash and prick potatoes with a fork.
- Bake potatoes directly on the oven rack for 45-60 minutes until tender.
- Cool slightly, cut in half lengthwise, and scoop out the insides into a mixing bowl.
- Mash potato insides with butter, heavy cream, sour cream, salt, pepper, and half the cheddar until smooth.
- Spoon mixture back into potato skins and top with remaining cheddar and chives.
- Bake again for 15-20 minutes until golden brown.
