- 8 oz fusilli pasta
- 1 can (5 oz) quality tuna in olive oil, drained
- 1 cup cherry tomatoes, halved
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- ¼ cup fresh parsley, chopped
- Juice of 1 lemon
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Boil salted water in a large pot over high heat. Add fusilli pasta and cook according to package instructions until al dente. Drain, reserving some pasta water.
- In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant. Add halved cherry tomatoes and cook until softened.
- Gently fold in the drained tuna along with salt, pepper, and red pepper flakes if using. Mix well.
- Add cooked pasta to the skillet along with reserved pasta water as needed for creaminess. Stir until well combined.
- Remove from heat and stir in chopped parsley and lemon juice.
- Serve hot, garnished with extra parsley if desired.
