  • 8 oz fusilli pasta
  • 1 can (5 oz) quality tuna in olive oil, drained
  • 1 cup cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • ¼ cup fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Boil salted water in a large pot over high heat. Add fusilli pasta and cook according to package instructions until al dente. Drain, reserving some pasta water.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant. Add halved cherry tomatoes and cook until softened.
  3. Gently fold in the drained tuna along with salt, pepper, and red pepper flakes if using. Mix well.
  4. Add cooked pasta to the skillet along with reserved pasta water as needed for creaminess. Stir until well combined.
  5. Remove from heat and stir in chopped parsley and lemon juice.
  6. Serve hot, garnished with extra parsley if desired.
