  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 2 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1 tsp fresh ginger, grated
  • 2 cloves garlic, minced

Instructions

  1. Cook egg noodles in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, add oil and sauté bell peppers, broccoli, and carrots until tender-crisp (about 5 minutes).
  3. In a small bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, and ginger until smooth.
  4. Add cooked noodles to the skillet with sautéed veggies. Pour the sauce over everything and toss gently for about 3 minutes until well coated.
  5. Garnish with chopped green onions and serve hot.
