  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 cup bell peppers, chopped (mix of colors for visual appeal)
  • 3 cups tortilla chips, crushed
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • ½ cup sour cream (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large casserole dish with cooking spray.
  2. In a skillet over medium heat, brown the ground beef. Add taco seasoning and bell peppers; sauté for about 5 minutes until soft.
