  • 1 medium sweet potato (about 200g), steamed and mashed
  • 2 large eggs
  • 1 cup milk (any type)
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tbsp butter or oil for cooking

Instructions

  1. Prepare the sweet potato by washing, peeling, and cutting it into small cubes. Steam until tender, about 15 minutes, then mash until smooth.
  2. In a large bowl, combine the mashed sweet potatoes, eggs, and milk until well mixed.
  3. In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually fold this dry mixture into the wet ingredients until just combined; avoid over-mixing.
  4. Preheat a non-stick skillet over medium heat and lightly grease with butter or oil.
  5. Pour approximately 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 3 minutes), then flip and cook for an additional 2–3 minutes until golden brown.
  6. Serve warm with your favorite toppings.
