Instructions

  1. Peel and rinse the sweet potatoes under cool water. Grate them into fine shreds using a box grater or food processor.
  2. Squeeze out excess liquid from the grated sweet potatoes using a clean kitchen towel.
  3. In a large bowl, combine the grated sweet potatoes, chopped onion, egg, salt, pepper, and paprika until well mixed.
  4. Heat olive oil in a nonstick skillet over medium heat until shimmering.
  5. Form small patties (about 1/4 cup each) with the mixture and place them in the skillet. Cook for 3-4 minutes on each side until golden brown and crispy.
