  • 1 cup mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs
  • ¾ cup milk (or plant-based alternative)
  • 2 tbsp maple syrup (plus more for serving)
  • Butter or oil for cooking

Instructions

  1. Preheat oven to 400°F (200°C). Poke holes in sweet potatoes and bake on a sheet for about 45 minutes, until tender.
  2. Once cooled, peel and mash the sweet potatoes in a bowl. Mix in flour, baking powder, cinnamon, nutmeg, eggs, milk, and maple syrup until smooth.
  3. Heat a non-stick skillet over medium heat and grease lightly with butter or oil.
  4. Pour about ¼ cup of batter onto the skillet. Cook until bubbles form on top (3-4 minutes), then flip and cook another 2-3 minutes until golden brown.
  5. Serve stacked high with maple syrup drizzled on top.
