Ingredients

Scale
  • 4 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 cloves fresh garlic (minced)
  • 1 cup bell peppers (sliced thinly; any color)
  • 1 cup pineapple chunks (fresh or canned)
  • ¼ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 2 tbsp cornstarch (mixed with 2 tbsp water)
  • 2 tbsp rice vinegar or apple cider vinegar
  • 2 tbsp vegetable oil
  • Sesame seeds (optional, for garnish)

Instructions

  1. Cut chicken breasts into bite-sized pieces for quick cooking.
  2. In a bowl, combine soy sauce, brown sugar, garlic, and vinegar. Add chicken pieces and marinate for at least 30 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and cook until golden brown, about 5-7 minutes.
  4. Stir in bell peppers and pineapple chunks; sauté until veggies are slightly softened (3-4 minutes).
  5. Mix cornstarch with water until smooth. Pour into the skillet along with any remaining marinade; stir until sauce thickens and glistens.
  6. Serve hot over steamed rice or noodles, garnished with sesame seeds if desired.
