  • 1 medium spaghetti squash
  • 1 lb lean ground turkey
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp Italian seasoning
  • 1 can (14 oz) diced tomatoes, low-sodium
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and scoop out seeds. Drizzle with olive oil and season with salt and pepper. Place cut-side down on a baking sheet.
  2. Roast for 30-40 minutes until tender, then let cool slightly.
  3. In a skillet over medium heat, heat olive oil and sauté onions and bell peppers until soft, about 5-7 minutes. Add minced garlic and ground turkey; cook until turkey is browned.
  4. Scrape out the spaghetti strands from the squash into a large bowl. Mix in the turkey mixture, diced tomatoes, half of the cheese, salt, and pepper.
  5. Transfer the mixture back into the squash halves or a baking dish. Top with remaining cheese and bake at 350°F (175°C) for 20 minutes until bubbly.
