- 2 cloves garlic, minced
- 1 medium carrot, finely diced
- 1 stalk celery, finely diced
- 28 oz canned San Marzano tomatoes
- 1/2 cup red wine
- 2 tbsp extra virgin olive oil
- 1 tsp dried oregano
- 1 tsp fresh basil (or 1/2 tsp dried)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat. Sauté the onions, carrots, and celery until softened.
- Increase heat to medium-high and add ground beef. Cook until browned (about 5-7 minutes).
- Stir in garlic and canned tomatoes; let simmer for about 15 minutes.
- Deglaze with red wine, scraping up any bits from the bottom of the pan. Allow to thicken slightly.
- Season with salt, pepper, oregano, and basil; adjust seasoning as needed.
- Reduce heat and let simmer gently for at least 30 minutes to deepen flavors.
- Serve over cooked spaghetti with freshly grated Parmesan cheese.
