- 8 corn or flour tortillas
- 2 cups red enchilada sauce

Instructions
- Season the beef chuck roast with salt and pepper. In a large pot over medium-high heat, sear each side until golden brown (about 4-5 minutes).
- Add diced onions and minced garlic; sauté until fragrant.
- Pour in enough water to cover the meat halfway, bring to a simmer, then cover and cook on low for about 3 hours until fork-tender.
- Remove the beef from the pot and shred it using two forks.
- Preheat oven to 350°F (175°C). Fill each tortilla with shredded beef and cheese, roll tightly, and place seam-side down in a greased baking dish.
