  • 2 tbsp red gel food coloring
  • 16 oz cream cheese (full-fat, softened)
  • 1 cup granulated sugar
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with nonstick spray.
  2. In a large bowl, combine the red velvet cake mix, 2 eggs, melted butter, water, and food coloring until just mixed.
  3. Divide the batter evenly between prepared pans. Bake for 25-30 minutes until a toothpick comes out clean. Cool completely before removing from pans.
  4. For the cheesecake layer, whisk together cream cheese and sugar until fluffy. Add 3 eggs one at a time and vanilla extract; mix until creamy.
  5. Pour the cheesecake mixture into a greased springform pan and bake at 325°F (160°C) for about 50-60 minutes until set but slightly jiggly in the center. Cool completely.
  6. Assemble by layering one red velvet cake on a serving plate, spreading cheesecake on top, then adding another layer of red velvet.
