- 1 cup cranberry sauce (homemade preferred)
- 2 tbsp soy sauce (low sodium)
- 2 tbsp balsamic vinegar
- 1 tbsp honey or maple syrup
- ½ cup cranberries (fresh or dried)
Instructions
- Preheat oven to 400°F (200°C). In a large bowl, combine ground beef, breadcrumbs, onion, egg, garlic powder, salt, pepper, and parsley. Mix gently until just combined.
- Form the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
- Bake for about 20 minutes or until golden brown and cooked through.
- While meatballs are baking, mix cranberry sauce, soy sauce, balsamic vinegar, and honey in a saucepan over medium heat until heated through.
- Carefully add baked meatballs to the sauce and toss to coat.
- Simmer for an additional 5 minutes before serving.
