Ingredients

  • 6 hard-boiled eggs
  • 1/2 cup canned pumpkin puree
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1/4 tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Cook the eggs in boiling water for 10-12 minutes. Transfer to an ice bath to cool.
  2. Once cooled, peel the eggs under running water and slice them in half.
  3. Scoop out the yolks into a bowl and mix with pumpkin puree, mayonnaise, Dijon mustard, cinnamon, salt, and pepper until smooth.
  4. Fill each egg white half with the mixture using a piping bag or spoon.
  5. Garnish with chopped parsley or chives before serving.
