Instructions
- In a bowl, combine chicken thighs with minced garlic, cumin, lime juice, salt, and pepper. Let marinate for at least 30 minutes.
- Peel and slice ripe plantains diagonally into thick pieces.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add marinated chicken and cook until golden brown on both sides (6-7 minutes per side). Remove from skillet.
- In the same skillet (or a separate one), heat remaining olive oil over medium heat. Fry plantain slices until golden brown (3-4 minutes each side).
- On a serving platter, layer fried plantains and top with sliced chicken thighs. Drizzle any pan juices over the dish.
