  • ½ tsp saffron threads
  • 4 chicken thighs (bone-in)
  • 8 oz shrimp (peeled and deveined)
  • 1 cup bell peppers (diced)
  • 4 cloves garlic (minced)
  • 3 cups chicken broth
  • 2 tbsp olive oil
  • ¼ cup fresh parsley (chopped)

Instructions

  1. Prep your ingredients by chopping bell peppers and mincing garlic. Rinse rice under cold water until clear.
  2. In a large paella pan, heat olive oil over medium-high heat. Add chicken thighs skin-side down; cook until golden brown (5-7 minutes per side).
  3. Add minced garlic and bell peppers to the pan; sauté until softened.
  4. Stir in the rinsed rice, then pour in chicken broth and add saffron threads. Bring to a simmer without stirring.
  5. After about 15 minutes, arrange shrimp on top of the mixture; let them steam while cooking for another 5 minutes.
  6. Once shrimp are cooked through, sprinkle with chopped parsley before serving.
