Instructions

- In another bowl, cream butter with brown and granulated sugar until fluffy. Beat in egg and vanilla.
- Gradually combine dry and wet ingredients until just mixed.
- Drop dough onto prepared sheets; bake for 10-12 minutes until edges are golden.
- Cool cookies on racks before adding filling: beat butter with powdered sugar until fluffy; mix in cream cheese if using.
- Spread filling on half of the cookies and top with remaining cookies to create sandwiches.
