  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter in a bowl until sandy.
  2. Line a muffin tin with paper liners and press one tablespoon of crumb mixture into each cup. Bake for 5-7 minutes until golden.
  3. In another bowl, beat cream cheese until fluffy. Gradually mix in sugar, then add eggs one at a time. Blend in vanilla and sour cream until smooth.
  4. Pour the cheesecake filling over each crust, leaving space to rise. Bake for 20-25 minutes until set but slightly jiggly.
  5. Let cool in the oven for an hour before transferring to the fridge to chill completely.
