- Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter in a bowl until sandy.
- Line a muffin tin with paper liners and press one tablespoon of crumb mixture into each cup. Bake for 5-7 minutes until golden.
- In another bowl, beat cream cheese until fluffy. Gradually mix in sugar, then add eggs one at a time. Blend in vanilla and sour cream until smooth.
- Pour the cheesecake filling over each crust, leaving space to rise. Bake for 20-25 minutes until set but slightly jiggly.
- Let cool in the oven for an hour before transferring to the fridge to chill completely.
