  • 2 boneless pork loin chops (about 1 lb)
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 medium sweet onion, sliced
  • 2 cups cooked short-grain rice
  • 1/4 cup low-sodium soy sauce
  • 1 cup dashi stock (or water with instant dashi powder)
  • 1 tbsp sugar (brown sugar optional)
  • 2 tbsp sake (optional)

Instructions

  1. Prepare all ingredients by slicing the onion and cutting the pork into cutlets.
  2. Dredge each cutlet in flour, dip in beaten egg, then coat with panko breadcrumbs.
  3. Fry cutlets in hot oil until golden brown and cooked through.
  4. In the same pan, sauté onions until translucent, then add dashi stock, soy sauce, sugar, and sake; bring to a simmer.
  5. Pour beaten eggs over the mixture in the pan; cover until eggs are just set but still slightly runny.
  6. Serve over bowls of cooked rice and drizzle with sauce; garnish with green onions or bonito flakes.
