- 8 oz Andouille sausage, sliced
- 1 cup bell peppers (mixed colors), diced

- 1 can (14.5 oz) diced tomatoes
- 1 cup long-grain rice
- 4 cups low-sodium chicken broth
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare your ingredients by chopping the bell peppers, onion, and garlic.
- In a large pot over medium heat, add olive oil. Sauté onions, bell peppers, and garlic until softened (about 5 minutes).
