  • 1/2 cup unsalted butter (room temperature)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar (light)
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/2 cup your favorite jam (raspberry, apricot, or strawberry)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg yolk and vanilla extract; mix until smooth.
  4. Gradually incorporate the flour until just combined; be careful not to overmix.
  5. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them apart.
  6. Make an indentation in each ball with your thumb or the back of a spoon.
  7. Bake for 12-15 minutes or until lightly golden around the edges.
  8. Remove from the oven and immediately fill each thumbprint with about half a teaspoon of jam while warm. Allow to cool on wire racks before serving.
