Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 4 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and sugar until crumbly. Press firmly into the bottom of a springform pan.
  2. Bake the crust for 8-10 minutes until golden brown; let cool.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar; mix in sour cream and vanilla extract.
  4. Add eggs one at a time, mixing gently to avoid overmixing.
  5. Pour the filling over the cooled crust and smooth out lumps.
  6. Bake for about 1 hour until set around edges but slightly jiggly in center. Turn off oven and crack door to cool gradually. Refrigerate for at least 4 hours before serving.
