Ingredients

Scale
  • 1 cup natural peanut butter (unsweetened)
  • ½ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats (gluten-free if needed)
  • ½ teaspoon baking soda
  • ½ cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Gradually add rolled oats and baking soda, mixing until combined. If desired, fold in dark chocolate chips.
  4. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them apart.
  5. Flatten each ball slightly with a fork to create a crisscross design. Bake for 10-12 minutes until edges are golden brown but centers remain soft.
