- 1 jar (16 oz) grape leaves, rinsed
- 1 cup long-grain rice, uncooked
- 1 medium onion, finely chopped (about 1 cup)
- ¼ cup fresh dill, chopped (or 2 tbsp dried)
- ½ cup lemon juice (freshly squeezed)
- ¼ cup olive oil (plus more for drizzling)
- Salt and pepper to taste
Instructions
- Rinse the grape leaves under cold water if using jarred; if fresh, blanch in boiling water for 2-3 minutes until tender.
- In a large bowl, mix rice, onion, dill, olive oil, salt, pepper, and lemon juice until well combined.
- Place a grape leaf on a flat surface with the stem end facing you. Add about 1 tablespoon of filling near the base. Fold sides over and roll tightly from bottom to top.
- In a pot or Dutch oven, layer leftover grape leaves on the bottom to prevent sticking. Arrange rolled grape leaves seam-side down in layers.
- Cover with water until about an inch above the rolls. Drizzle olive oil and squeeze more lemon juice on top.
- Bring to a boil over medium heat; then reduce heat to low and simmer for about 45 minutes until rice is tender.
