  • 1 cup pearled farro
  • 3 cups low-sodium vegetable broth
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 2 cups fresh spinach
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped

Instructions

  1. Rinse farro under cold water. In a medium pot, combine rinsed farro and vegetable broth. Bring to a boil over medium heat.
  2. Once boiling, reduce heat to low, cover, and simmer for 25-30 minutes until tender but still chewy. Drain excess liquid if needed.
  3. In a large skillet over medium heat, add olive oil and sauté bell peppers and zucchini for 5-7 minutes until softened.
  4. Add spinach, basil, and parsley to the skillet; stir until spinach wilts (about 2-3 minutes).
  5. Combine cooked farro with the sautéed vegetables in the skillet. Squeeze in lemon juice and mix well.
  6. Serve in bowls or plates; garnish with additional herbs or lemon zest as desired.
