- 8 flour tortillas
- 2 cups cooked, shredded chicken
- 1/4 cup fresh cilantro, chopped
- 1 cup sour cream (full-fat)
- 1 cup green salsa verde
- 1 cup Monterey Jack cheese, shredded
- 4 oz cream cheese, softened
- 1 cup low-sodium chicken broth
- 2 tbsp lime juice
- 1 tsp garlic powder
- Salt to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix shredded chicken with chopped cilantro and half of the Monterey Jack cheese.
- In a saucepan, melt cream cheese over medium heat. Gradually add chicken broth until smooth.
- Stir in green salsa, lime juice, garlic powder, and salt until well combined.
- Fill each tortilla with about 1/4 cup of the chicken mixture, roll tightly, and place seam-side down in a greased baking dish.
- Pour the creamy sauce over the enchiladas and sprinkle with remaining cheese.
- Bake for 25-30 minutes until bubbly and golden. Serve with extra cilantro.
