- 1 lb beef sirloin, sliced thinly
- 2 bell peppers (1 red, 1 green), sliced
- 1 large yellow onion, sliced
- 4 cloves garlic, minced
- 1 cup low-sodium beef broth
- 3 tbsp low-sodium soy sauce
- 2 tbsp cornstarch mixed with 2 tbsp water
- Salt and black pepper to taste
Instructions
- Slice the beef sirloin against the grain into thin strips.
- In a skillet over medium heat, sauté sliced onions and bell peppers until softened (about 5 minutes). Add minced garlic in the last minute of cooking.
- Transfer the sautéed vegetables to the crockpot and layer the beef on top. Pour in beef broth and soy sauce.
- Cook on low for 6-8 hours or high for 3-4 hours until meat is tender.
- About 30 minutes before serving, stir in cornstarch mixture to thicken the sauce.
