Ingredients

  • 1 lb beef sirloin, sliced thinly
  • 2 bell peppers (1 red, 1 green), sliced
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • Salt and black pepper to taste

Instructions

  1. Slice the beef sirloin against the grain into thin strips.
  2. In a skillet over medium heat, sauté sliced onions and bell peppers until softened (about 5 minutes). Add minced garlic in the last minute of cooking.
  3. Transfer the sautéed vegetables to the crockpot and layer the beef on top. Pour in beef broth and soy sauce.
  4. Cook on low for 6-8 hours or high for 3-4 hours until meat is tender.
  5. About 30 minutes before serving, stir in cornstarch mixture to thicken the sauce.
