Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat heavy cream and vanilla over medium heat until warm.
  3. In a bowl, whisk egg yolks and sugar until pale yellow.
  4. Gradually pour warm cream into the egg mixture while whisking constantly.
  5. Pour the custard into ramekins in a baking dish filled with hot water halfway up their sides.
  6. Bake for 30-40 minutes until set but slightly jiggly in the center.
  7. Chill in the fridge for at least 2 hours.
  8. Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
