- 1 medium onion (chopped)
- 1 can (15 oz) kidney or black beans (drained)
- 1 cup sweet corn (frozen or canned)
- 2 cups shredded cheddar cheese
- 15 oz tomato sauce (low-sodium if preferred)
- 2 cups crushed tortilla chips
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C). Grease a large baking dish with nonstick spray.
- In a skillet over medium heat, brown the ground beef with chopped onions until translucent.
- Stir in drained beans, corn, tomato sauce, chili powder, cumin, and garlic powder; simmer until heated through.
- Layer half of the beef mixture in the baking dish. Top with half of the crushed tortilla chips and half of the cheese.
- Repeat layers with remaining ingredients and bake for 25-30 minutes until cheese is bubbly.
