- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tablespoons olive oil
- 1 cup bell peppers (mixed colors), sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 8 ounces provolone or cheddar cheese, sliced
- Salt and pepper to taste
- 4 sub rolls or hoagie buns
Instructions
- Prepare your ingredients by slicing the bell peppers and onions.
- Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and they reach an internal temperature of 165°F (75°C). Remove from skillet and slice thinly.
- In the same skillet, add the sliced onions and peppers. Sauté for around 5-6 minutes until softened.
- Stir in minced garlic during the last minute of cooking.
- Return sliced chicken to the skillet, mix with vegetables, and top with cheese slices. Cover until cheese melts.
