- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 cups green enchilada sauce
- 8 flour tortillas
- 2 cups shredded Monterey Jack and cheddar cheese blend
- 1 cup sour cream
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- Preheat your oven to 375°F (190°C). Boil water in a pot and cook the chicken breasts until no longer pink, about 15 minutes.
- Once cooked, shred the chicken using two forks.
- In a large bowl, mix shredded chicken with minced garlic, half of the green sauce, and half of the cheese.
- Spread some green sauce on the bottom of a baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
