Ingredients
- 2 cups short-grain sushi rice
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori
- 1 cup imitation crab meat (or real crab)
- 1 ripe avocado, sliced
- 1/2 cucumber, julienned
- Toasted sesame seeds (for garnish)
Instructions
- Rinse sushi rice under cold water until water runs clear. Cook according to package instructions and let cool.
- Mix rice vinegar, sugar, and salt in a bowl until dissolved; fold into cooled rice.
- Slice avocado and julienne cucumber for filling.
- Place a nori sheet on a bamboo mat, spread an even layer of sushi rice over the nori, leaving 1 inch at the top edge.
- Lay down strips of imitation crab, cucumber sticks, and avocado in the center.
- Roll tightly from the bottom edge using the bamboo mat; moisten the top edge with water to seal.
- Slice into six or eight pieces with a sharp knife dipped in water and serve with soy sauce.
