  • 1 cup finely grated Pecorino Romano cheese
  • 1 tbsp freshly cracked black pepper
  • Sea salt (for pasta water)

Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti or bucatini and cook until al dente (8-10 minutes). Reserve 1 cup of cooking water before draining.
  2. In a bowl, combine the reserved pasta water with the grated cheese.
  3. In a large pan over low heat, add drained pasta and half of the cheese mixture. Stir quickly.
  4. Sprinkle in cracked black pepper and mix well, adding more reserved water as needed until creamy.
  5. Taste and adjust seasoning with additional cheese or pepper if desired.
  6. Serve immediately, garnishing with extra cheese and cracked pepper.
