Ingredients

Scale
  • 2 large flour tortillas
  • 4 large eggs
  • 1 cup cooked sausage (spicy or mild)
  • 1 cup bell peppers (chopped)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (or Greek yogurt)

  3. Add chopped bell peppers to the skillet and sauté for 3–4 minutes until softened.
  4. Pour whisked eggs into the skillet, stirring gently until set but still creamy, about 2–3 minutes.
