Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch round cake pan.
  2. Soak mixed dried fruits in dark rum overnight for maximum flavor.
  3. In a mixing bowl, cream butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon zest, orange zest, and vanilla extract.
  5. In another bowl, whisk together flour, baking powder, cinnamon, and nutmeg. Gradually add this mixture to the wet ingredients until combined.
  6. Fold in the soaked fruits with any remaining rum until evenly distributed.
  7. Pour batter into the prepared pan and smooth the top. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
