  • 3 lbs bone-in beef short ribs
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup red wine (preferably dry)
  • 2 tbsp tomato paste
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 1 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the onions and garlic.
  2. Season the short ribs generously with salt and pepper.
  3. In a large pot over medium-high heat, sear the short ribs until browned on all sides. Remove and set aside.
  4. In the same pot, sauté onions and garlic until translucent.
  5. Add beef broth, red wine, tomato paste, brown sugar, thyme, and rosemary; scrape up any browned bits.
  6. Return the short ribs to the pot. Cover tightly and simmer on low heat for 2-3 hours until tender.
  7. Serve with sauce spooned over the top.
