  • 4 lbs beef short ribs
  • 1 tsp salt
  • 1 tsp pepper
  • 2 yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup Cabernet Sauvignon (or any good-quality red wine)
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • 2 tbsp browning sauce or soy sauce

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Pat beef short ribs dry and season generously with salt and pepper.
  3. In a large Dutch oven over medium-high heat, sear the ribs on all sides until browned (about 3-4 minutes per side). Remove and set aside.
  4. In the same pot, sauté onions and garlic until softened (about 5 minutes).
  5. Pour in red wine and scrape the bottom of the pot to release flavorful bits; simmer for about 5 minutes.
  6. Stir in beef broth, thyme, and bay leaves; return ribs to the pot.
  7. Bring to a gentle boil, cover, and transfer to the oven; braise for 2-3 hours until fork-tender.
