- Heat a nonstick skillet over medium heat and lightly grease. Pour 1/4 cup of batter into the skillet, swirling to form a thin layer. Cook until edges lift slightly; flip and cook briefly on the other side.
- For the filling, combine pudding mix with heavy cream according to package directions until thickened.
- To prepare the ganache, microwave chocolate chips and corn syrup in intervals until melted; stir until smooth.
- Assemble by spreading pastry cream on each crêpe, folding it up, and drizzling with warm ganache.
