  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp taco seasoning
  • 8 corn or flour tortillas
  • Optional toppings: avocado, cilantro, cheese, salsa

Instructions

  1. Cut chicken breasts into smaller chunks for even cooking.
  2. Set Instant Pot to 'Sauté' mode. Add a drizzle of oil and sauté onions and garlic until fragrant.
  3. Stir in chicken and taco seasoning; coat well.
  4. Pour in chicken broth to cover the chicken.
  5. Seal the lid and set to 'Manual' mode for 10 minutes at high pressure; seal the valve.
  6. Once finished, release pressure carefully and shred chicken with two forks inside the pot.
