  • 1 cup bell peppers (sliced)
  • 1 cup snap peas
  • 3 cloves garlic (minced)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1-inch piece ginger (minced)
  • 2 green onions (chopped)

Instructions

  1. Press the tofu for 15 minutes to remove excess moisture. Cut into cubes.
  2. Marinate tofu in soy sauce while prepping veggies.
  3. Heat oil in a skillet over medium-high heat; sauté bell peppers and snap peas for 4-5 minutes until tender-crisp.
  4. Add garlic and ginger; cook for an additional minute.
  5. In another pan, fry marinated tofu until golden brown on all sides (7-10 minutes).
  6. Combine tofu with sautéed veggies, drizzle with sesame oil, and toss gently before serving.
