  • 1 lb beef sirloin
  • 1/4 cup fresh cilantro, chopped
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, thinly sliced
  • 3 tbsp lime juice (freshly squeezed)
  • 2 tbsp fish sauce
  • 1 tsp sugar
  • 1/2 tsp chili flakes (adjust to taste)
  • 1/4 cup toasted peanuts (optional)

Instructions

  1. Slice the beef sirloin against the grain into thin strips. Marinate in lime juice, fish sauce, sugar, and chili flakes for at least 30 minutes.
  2. Heat a skillet over medium-high heat. Add oil and sauté marinated beef until browned and cooked through (3-5 minutes). Allow to cool slightly.
  3. While beef cooks, chop cucumber, halve cherry tomatoes, and slice red onion. Combine these veggies with chopped cilantro in a large bowl.
  4. In a small bowl, whisk together leftover marinade and extra lime juice for the dressing.
  5. Once beef has cooled, combine it with salad ingredients and drizzle dressing over everything. Toss gently to coat.
  6. If using, sprinkle toasted peanuts on top before serving.
