  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk (or low-fat milk)
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground nutmeg

Instructions

  1. Cook the penne in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
  2. In a saucepan over medium heat, melt butter. Whisk in flour and cook for 2 minutes until golden.
  3. Gradually add milk while whisking to prevent lumps. Cook until thickened (about 5 minutes).
  4. Stir in garlic, salt, pepper, nutmeg, and half of the Parmesan cheese; heat through for about 2 minutes.
  5. Toss cooked pasta with sauce until well-coated. Serve hot with remaining Parmesan on top.
