Instructions
- Peel and cube the pumpkin into small chunks. Chop the onion and mince the garlic.
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
- Add pumpkin cubes and minced garlic; cook for another 3-4 minutes until fragrant.
- Pour in vegetable broth and bring to a gentle simmer. Cook until the pumpkin is tender, about 20 minutes.
- Blend the mixture until smooth using an immersion blender or regular blender (allow to cool slightly if using a traditional blender).
